Stuffed pork chops

Preparation

  1. Heat oven to 190C conventional. Finely dice onion. Heat 1 tablespoon oil in a pan and cook onion for 4 minutes until soft. Mix with breadcrumbs, parsley, stock, 1/2 teaspoon salt and pepper to make a moist stuffing.
  2. Cut a deep pocket into the long side of each chop with a small knife, without cutting through the far side. Press one quarter of stuffing into each pocket and close with a toothpick if needed.
  3. Heat remaining oil in an ovenproof pan over high heat. Sear chops 2 minutes per side. Put pan in oven and cook for 15 to 18 minutes, until thickest part reaches 63C.
  4. Trim beans and cook in boiling salted water for 5 minutes. Drain. Rest chops for 5 minutes; temperature will rise further.
  5. Remove toothpicks. Serve chops with beans. Without a thermometer, cut the thickest chop through to filling: meat must not be pink and stuffing must be hot.
