Pan con tomate y jamón

Preparation

  1. Take the ham from the fridge 15 minutes before serving. Set out the bread and tomatoes on a clean work surface.
  2. Wash and halve the tomatoes, then grate them on the coarse side of a grater into a bowl, holding back and discarding the skins. Stir in salt and half the oil.
  3. Toast the bread for 2–3 minutes in a toaster, dry frying pan or under a grill until golden. It should be crisp outside but still soft in the middle.
  4. If using garlic, rub the cut side over each warm slice once.
  5. Divide the tomato mixture across the bread, drizzle with remaining oil and lay the ham loosely on top.
  6. Serve at once. Do not assemble ahead or stack the slices; the tomato will soften the bread.
